Whatever you choose, make sure that the handles and buttons have been fixed in many areas not to come off. Plastic and wood handles are heat-resistant but not oven-resistant: you can’t start a pot on the stove and finish it in the oven. You may be more satisfied with buying fewer individual pieces in different materials – for example, a sizeable anodized aluminum pan or high-side wok for french fries and an omelet pan for egg dishes.
